Okay, so apparently when I said “later today” in my last post, what I really meant was “two days later.” My bad. SORRY. Anyway, I know you’ll forgive me as soon as you get a look at this incredibly absurd delicious breakfast sandwich…
Can I get a hell yeah? This is my absolutely favorite go-to meal…breakfast, lunch, 4am, whatever. You most likely have all the ingredients at hand, so give this a go right now. RIGHT NOW I SAY. Start off by toasting an english muffin, and then slice up some cheddar cheese. This is not the place for some gorgeous artisan cheddar, go for that extra-sharp orange cheddar cheese.
Not sure why I felt that merited its own photo, but there you have it. While the english muffin is toasting, throw a frying pan over high heat, add a nice nob of butter, and turn down the heat to low. Crack in an egg and after its set for about a second, roughly scramble it up with your rubber spatula. Now you could just whisk up your egg before pouring it into the pan, but for some reason I like the more rustic (and by rustic I mean bodega-style) mix of yellow and white bits. Shape into a circle, flip once, and season with salt and pepper.
Grab a jar of your favorite salsa. For me that would be one that’s totally loaded with corn, black beans, roasted red pepper, etc. Seriously this stuff is so good I could eat it straight out the jar. In fact, I generally do. Whatever. So grab your salsa, and spoon some on to one half of your toasted english muffin. God, even just a picture of this salsa makes my mouth water.
Top the salsa half with several thin slices of ham or turkey. Top the other half with sliced cheddar cheese and place your scramble/fried egg on top.
Pop the entire thing shebang under your broiler for several minutes, until the cheese is deliciously melty and everything is warmed up and lovely. Then carefully maneuver the salsa/ham half on top of the egg/cheddar half, and enjoy! Totally ridiculously perfect. I’m like, literally about to remake this right now, as these pictures are driving me crazy. And can I get a little “what what” for the Fordham University mug in the background? Haha – I’m such a dork, but it was Homecoming Weekend after all.

Best thing about a breakfast sandwich is that it’s not just for breakfast. This would make a sweet dinner!
